Nutrition with Seru Mar

CAJUN CHICKEN
Ingredients


750 gm -1 kg diced chicken or chicken strips
3 tbsp olive oil
2 tsp ground cumin
1 tsp minced ginger
pinch salt & pepper
pinch chilli powder
1 tsp cajun spice

Method
Mix olive oil and spices then marinate chicken in it for at least 1 hour.
Heat 1 tablespoon of olive oil in frying pan until hot. Fry for 7-10 minutes on medium to high heat. Set aside.


FALAFEL
Method
Falafel is a mixture of ground chickpeas and beans, and is a great source of vegetarian protein. Falafels can be brought at the supermarket or Middle Eastern spice shops. Follow the instructions on the packet. Basically you just add water to the mixture and shape into falafel “ovals”, then shallow fry them in olive oil.


GUACAMOLE
Ingredients
1 large ripe avocado, diced
1 medium tomato, diced
2 tbspn lemon or lime juice
½ tsp minced chilli
½ tsp minced garlic
salt & pepper to taste

Method
Mix all ingredients together. Store in fridge until ready to use.


COLESLAW
Ingredients
¼ red cabbage
¼ green cabbage
1 x grated Carrot
250g mung bean sprouts
1 x green pepper cut into long strips
1 x red pepper cut into long strips
1 x handful parsley finely chopped

Method
Mix all ingredients together.
Dress with lemon juice, salt and pepper. (Don’t use creamy dressing or mayonnaise)


YOGHURT DRESSING
Ingredients
250ml plain yoghurt
1 tbspn finely chopped mint
pinch of ground cumin
1 teaspoon of honey
salt & pepper

Method
Mix together and set aside until ready to use.


TO ASSEMBLE WRAPS:
1. Heat oven and put tortillas in for 1 minute only to warm through (any more and they will crisp up) – OR – if wraps are fresh just use cold.
2. Heat cooked chicken and falafel in oven. Spread a layer of chicken or falafel (or both) down centre of wrap, adding guacamole, coleslaw and yoghurt dressing on top.
3. Wrap up carefully, wrapping paper towel or tinfoil around bottom end, leaving top end open.
